In combat, Essence just comes back at a steady 5 motes per round. It's not tied to stunts any more-- stunts give different rewards.
The range bands for EX3 combat are close (aka melee range), short, mid, long, and extreme.
[largest number of dice that anyone has rolled for a 3E test?] It's been in the 8-13 range so far, mostly. You're not going to see anyone rocking a dice pool in the 20s on cruise control.
